The phrase “large scales of matter” might be better expressed as “large-scale structures.” For studying slow dynamics (e.g. protein dynamics), SANS is not a suitable technique. The cited reference (behind a paywall) concerns holographic gratings, which, while potentially relevant to future neutron optics applications, appear not at all related to biology or SANS. The choice of reference suggests self-promotion.
